Inventory__start Seed Job

Starts a dataset import in the background and returns a jobId. Poll inventory__seedJobStatus for progress. Used by the "activate theme" import dialog to show a per-category progress bar. Requires a signed-in staff user. Needs the `inventory__Product` `create` permission. Send the `x-tenant` header (the gateway sets it from your API key).
